Creamy Poppy Seed Dressing

Dress up any salad with this zesty and simple creamy poppy seed dressing.

  • 2 Tbsp apple cider vinegar
  • 2 Tbsp olive oil (or oil of choice)
  • ½ cup non-fat greek yogurt
  • 1 tsp onion powder (or onion salt. Omit extra salt if you use onion salt)
  • ½ tsp salt
  • ¼ tsp pepper
  • 4 packets stevia (or 1-2 Tbsp honey or agave. Nutrition will change)
  • 2 tsp poppy seeds

  1. Mix together all the ingredients (except poppy seeds) in a blender (I used my Blendtec).
  2. Once combined, stir in poppy seeds.
  3. Can be served immediately, or chill for best result.  Store in an airtight container. Not sure of the shelf life, but I would assume you'd want to consume it within approx 5 days.

Best Cookies Ever
October 2018

1 cup butter (2sticks room temp)
1/2 c white sugar
3/4 c brown sugar
1 tsp vanilla ex
2 large eggs

In separate bowl mix:
2.5-3 cups flour (I put 3.. Makes them fluffier)
1 tsp baking soda
1 tsp salt

Slowly mix flour mix to wet ingredients. Stir in three cut up Hershey bars and half a bag of white choco chips. Use ice cream scooper to scoop onto parchment paper (I use parchment paper on regular cookie sheets and u don't need to spray and they slide right off after a couple mins of cooling) These are big cookies if you use less dough I would bake for less time. Bake 350 for 13 mins. Eli is addicted they are very good.

½ Cup Lemon Juice

4 ½ c Sugar

For both recipes: Add liquid (wine / juice), lemon juice and pectin, bring to hard boil, add sugar all at once, bring to hard boil. Recipe says boil for 2 minutes (4 in reality)

Water bath: 10 minutes covered on full boil with lid on, then 5 on burner with it turned off and lid removed.
